I starting dressing up as Cat in the Hat when Ella was in Kindergarten and Ian was in 3rd grade!

Ian wouldn't let me read to him in 4th grade but he did let me change and eat lunch with him!

This year I made "Thing" cupcakes!
The cupcake holder is from TJ Maxx.
It is a FAVORITE!!
Very easy to transport and the cupcakes can't turnover
unless you completely turn the holder upside down!! ;)
I made a cream cheese icing from Ella's American girl baking book!
It was good but I'm not sure that I will make it again.
My FAVORITE icing is this recipe from Unsophisticook
Best Buttercream Frosting
Ingredients:
- 1 cup salted butter (2 sticks), softened
- 4 cups confectioner's sugar, sifted
- 1 tablespoon pure vanilla extract
- 3-5 tablespoons heavy cream
Instructions:
- Using a paddle beater, beat softened butter on medium speed for about 3 minutes.
- Add sifted confectioner's sugar and stir on low until incorporated.
- Add vanilla extract and 3 tablespoons of heavy cream. Beat on medium-high for 3 minutes, stopping to scrape the sides once or twice.
- If a thinner frosting is desired, add additional heavy cream 1 tablespoon at a time until desired consistency is reached.
In 5th grade, Ian wanted NO part of it! He didn't even ask to have lunch with him:( Which is NOT my FAVORITE
